Ultimate Chicken Salad

Summer is the hardest season for me to cook in. Especially once we get to July and August in the heat. Not the biggest fan of cold foods, or salads, but this one is perfect for hot days.

Also, we use rotisserie chicken as much as possible and buy two at a time. I’ll share why later, but save the bones.

Recipe:

Ingredients:

  • Meat from rotisserie chicken- shredded (I did a whole chicken because my kids eat a lot these days)

  • 2 avocados- diced

  • 1/2 cup kalamata olives- chopped

  • 1/2 cup sun dried tomatoes-chopped

  • 1/2 Fresh mozzarella ball- chopped

  • 2 cups of spinach- torn into large pieces

  • Fresh basil- about 10 leaves

  • 1 cup olive oil mayo

  • Pita bread

Instructions:

  • Pretty easy instructions here: put it all in a bowl and stir. Best when the avocados mash up a little and mix in with the mayo.

  • Cut pita bread in half.

  • Fill the pita bread with the mixture and enjoy!

  • This mixture will make about 6 large sandwiches.
