Steak Fajita Bowls for Beef Cakes

Does anyone else have a house full of teenagers, looking in every mirror as they walk by, asking for the sugar content and macros of everything you make? Only to then head to Crumble Cookie each week to try every. single. flavor. available.

Oh. No? That’s just my house?

Kind of reminds me of being a teenager with two brothers in the house. One would check himself out in the patio door every time he walked by. Without fail. Guess its the age.

Anyway, I have NO idea what the macros are in this meal. (Maybe that’s something I’ll attempt to figure out and understand someday.) Either way, this is a meal that everyone can get on board with and feel good about. Its also one my kids ask for on a regular basis- We’re talking weekly… The left overs keep perfectly for lunches and they always get eaten- no waste.

Ingredients:

  • 2 lbs of beef- steak or roast

  • 2 bell peppers- your choice on color- chopped

  • 1 onion- chopped

  • 2 jalapenos- chopped

  • 2-4 garlic coves- minced

  • 1 tbsp cornstarch

  • 2 tsp chili powder

  • 1 tsp salt

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp cumin

  • 1/4 tsp cayenne pepper

  • 1 1/2 c uncooked rice

  • Olive oil

  • 3 c chicken stock - Bonus if its homemade

Toppings:

  • Avocado

  • Shredded cheese- cheddar and pepper jack- still trying to use up the ridiculous amount of that Amish cheese we bought…

  • Salsa

  • Black beans- aka, more protein.

  • Plain Greek yogurt- less fat and higher protein than sour cream, but use whichever you’d like.



Instructions:

  • Cut steak into 1 inch, bite size chunks

  • Chop veggies.

  • Mix all spices together in a small bowl.

  • Heat oil in a pan on medium heat and add peppers, onion and garlic.

  • In the meantime, add chicken stock and rice to a pot on medium heat.

  • Once veggies are soft- add beef to the same pan and season with spice mixture. I ended up with a little under 2 1/2 lbs of beef for this, so I added a little extra of all my spices this round. Let the meat cook a little before stirring all the veggies in. Cook together about 10 minutes, less if you want the steak more medium rare than well done.

  • Drain, rinse and heat black beans.

  • Slice up avocados.

  • Rice should finish about the same time as the meat.


Layer everything into a bowl, starting with the rice, then meat, then toppings. Done!

Here are the left overs.

Let’s face it, these will probably be gone before I get up in the morning and head to work…
