Smashed Zucchini

You should have seen Blake’s face when I put the zucchini in a bag and asked him to take it out to the deck and smash it…

I can’t really take much credit for this one. I saw it on TikTok. Her video talked about how the rough, broken edges roast the best, and she wasn’t wrong!

The biggest key with this one is time it to be ready at the end of your other food. Zucchini doesn’t hold heat well. I tasted this first straight off the grill and it was great! Then by the time I got dished up for actual supper, it was cold. Not as great. Serve it HOT!

Ingredients:

  • 3 to 4 medium zucchinis

  • 1 1/2 cup plain Greek yogurt

  • 3-4 garlic cloves, minced

  • 1 Tbsp fresh lemon juice

  • Salt and pepper

  • Olive oil

  • Parmesan cheese to garnish

Instructions:

  • Heat the grill to medium.

  • Next- smash the zucchini. We did this by putting it in a plastic bag and hitting it with a metal water bottle. Not super technical! This could be done with a rolling pin too. Pieces of the zucchini should be big chucks- roughly three inches.

  • Drizzle the zucchini with olive oil and place zucchini pieces on the grill.

  • Grill for 15 to 20 minutes. Turning occasionally. You will want the edges to start to darken.

  • While the zucchini roasts, mix the yogurt, garlic and lemon juice and spread it on a platter.

  • Once the zucchini is roasted to your satisfaction, remove from the grill and place directly on the yogurt sauce.

  • Salt and pepper to taste, sprinkle with parmesan and serve immediately.
