Classic Meatloaf- but better.

I feel like meatloaf is kind of under rated… or at least not really talked about anymore. This was one of my favorites growing up, but sometimes I forget about it now Also, its kind of a weird meal if you really think of it. Basically just like eating a chunk of hamburger. Its kind of like Salisbury steak, no one really talks about how much they love it, but who doesn’t like it? Probably no one. Anytime I make this, there are ZERO leftovers. This is also an easy one to prep ahead of time so it can just be thrown in the oven after work.

Recipe:

Ingredients-

  • 2 lbs of lean hamburger

  • 1 cup milk

  • 2 eggs

  • 1/2 cup oats (or bread crumbs, but I like oatmeal better)

  • 1 onion- diced

  • 3 garlic cloves- minced

  • Olive oil

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1/2 tsp ground sage

  • 1/4 tsp red pepper flakes

  • 1 cup ketchup (I use sugar free, but whatever works)

  • 1 Tbsp mustard

  • 3 Tbsp brown sugar

Instructions-

  • Preheat the oven to 375 degrees.

  • Mix hamburger and oats.

  • Beat eggs into the milk. Then add to hamburger mixture and mix well. Add spices and mix. I made the mistake this round of not mixing the spices together first… It worked out anyway, just took longer to make sure it was evenly spread in the meat mixture.

  • In a small pan, heat olive oil. Cook onion and garlic until the onion is soft. I like to precook most of my vegetables to release some of the moisture. I feel like the flavor combines with the meat better this way and doesn’t cause your meatloaf to fall apart. Once it’s cooked, add it to the meat mixture.

  • In a separate bowl, combine ketchup, mustard and brown sugar. Stir until well combined.

  • Grease a loaf pan. I typically use butter. Rub the stick along the inside of the pan until its coated. Easy peasy. (Is that how you spell “peasy?” Then add the ketchup mixture into the bottom of the pan.

  • Add the meat mixture to the pan and gently push down to form the loaf, but not so hard that the liquid comes up the sides.

  • Bake in the oven for about 40 minutes.

You know, I thought I was going to pop this out of the pan and make it look pretty for the photo. Didn’t work out. Just serve it straight out of the pan.
