Hotdish, Hotdish

It almost seems silly to me to post this recipe, because everyone knows it, right? Everyone also has a different name for it- Red hotdish, Goulash and I’m sure there are others. We called it Hotdish, Hotdish. Why? I have no clue.

I spent a good portion of my teenage years as a vegetarian. It seems crazy to me now, mostly just because I feel so much better when when meat is a part of my diet. This was one of my “cheat,” foods- though I would have never told my friends that at that time. If my mom put this on the table, that bean burrito or Boca burger was waiting until tomorrow.

Ingredients:

  • 1 lb of elbow macaroni

  • 1 1/2 lbs of lean hamburger

  • 1 to 1 1/2 c of undiluted tomato soup- works great if you can use up the rest of the carton from the porcupine meat balls.

  • 1 cup of ketchup- yes, I know this seems weird.

  • 1 bag of frozen corn

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp brown sugar

Instructions:

  • Start by cooking the pasta according to the directions. I use a large pot for this so its easier to mix everything together in the end.

  • Next, brown the hamburger. Season the meat with salt, pepper and brown sugar while it is warm, but still mostly raw. Continue to mix until all the pink is gone.

  • Add corn, tomato soup and ketchup to the pan with the hamburger and combine.

  • The pasta should be done about now. Drain the water. Do not rinse.

  • Dump the hamburger mixture in with the pasta and mx until all the noodles are well coated.

  • Dish up and enjoy!

Serves- a lot. Probably 10.
